Jusqu\u2019\u00e0 ce jour, l\u2019entreprise brassait encore et toujours le lambic dans le brassin en fonte datant de 1896. Cependant, celui-ci ne r\u00e9pondait plus aux exigences de s\u00e9curit\u00e9 en mati\u00e8re de travail et sa capacit\u00e9 n\u2019\u00e9tait plus suffisante. \u00ab\u00a0Cette nouvelle installation nous permet d\u2019\u00e9crire un nouveau chapitre de l\u2019histoire d\u00e9j\u00e0 tr\u00e8s riche du lambic\u00a0\u00bb, explique avec fiert\u00e9 le brasseur Frank Boon.<\/p>\n<p>La nouvelle salle de brassage, enti\u00e8rement automatique, a \u00e9t\u00e9 sp\u00e9cialement con\u00e7ue pour le brassage du lambic. Elle poss\u00e8de une capacit\u00e9 maximale presque trois fois plus importante que celle de l\u2019ancienne salle. Mais pas de lambic sans des levures sauvages, ce qui explique que la cuve de refroidissement de l\u2019ancienne salle de brassage reste en activit\u00e9.<\/p>\n<p>La nouvelle salle de brassage peut \u00eatre qualifi\u00e9e de salle \u2018verte\u2019. La consommation d\u2019\u00e9nergie y a \u00e9t\u00e9 r\u00e9duite de moiti\u00e9 gr\u00e2ce \u00e0 un \u00e9changeur de chaleur qui condense les vapeurs et r\u00e9cup\u00e8re l\u2019\u00e9nergie.
