Le frituriste est un professionnel qui ma\u00eetrise mieux que quiconque l\u2019art de la cuisson des frites et chaque frituriste d\u00e9tient le secret de la saveur de ses propres frites et de sa sp\u00e9cialit\u00e9 sp\u00e9cifique. Et c\u2019est pr\u00e9cis\u00e9ment cela qui fait toute la diff\u00e9rence avec le monde du fastfood o\u00f9 tout tourne autour de la m\u00eame saveur et des m\u00eames produits. Le frituriste est un artisan qui fournit un travail sur mesure. Il connait ses clients et ceux-ci le connaissent \u00e0 leur tour, lui et ses frites. Sa friterie est unique, son nom est souvent tr\u00e8s original et personnel. Sa baraque \u00e0 frites est un lieu social de rencontre.<\/strong><\/em><\/p>\n<p>Et soyons rassur\u00e9s, nous pourrons continuer de cuire nos frites \u00e0 la belge, \u00e0 savoir les pr\u00e9cuire aux alentours de 140-150\u00b0C, les laisser reposer pour ensuite proc\u00e9der \u00e0 la cuisson finale afin de les rendre dor\u00e9es et croustillantes tout en pr\u00e9servant pleinement le go\u00fbt de la pomme de terre au c\u0153ur de la frite. R\u00e9cemment, une aberration avait d\u00e9fray\u00e9 la chronique lorsque la Commission europ\u00e9enne pr\u00e9tendait que les frites devaient \u00eatre blanchies avant d\u2019\u00eatre cuites pour emp\u00eacher ainsi la formation d\u2019acrylamide nocive. Heureusement, cela s\u2019est limit\u00e9 \u00e0 une temp\u00eate dans un verre d\u2019eau, la Commission s\u2019\u00e9tant limit\u00e9e \u00e0 une simple recommandation. Notre culture du \u2018fritkot\u2019 belge a officiellement \u00e9t\u00e9 reconnue comme patrimoine belge immat\u00e9riel et tous les gouvernements comp\u00e9tents se sont accord\u00e9s pour attribuer \u00e0 la Belgique cette reconnaissance.<\/p>\n<p>Gr\u00e2ce \u00e0 cette reconnaissance nationale la culture du \u2018fritkot\u2019 belge devient \u00e9ligible \u00e0 l\u2019inscription au patrimoine mondial de l\u2019UNESCO. Au total, ce sont non moins de onze de nos produits qui figurent au patrimoine immat\u00e9riel de l\u2019UNESCO. Pensez ici \u00e0 nos c\u00e9l\u00e8bres p\u00eacheurs de crevettes d\u2019Oostduinkerke, notre culture de la bi\u00e8re, le carnaval d\u2019Alost, la Krakelingenfeest et Tonnekensbrand de Gramont, le carnaval de Binche pour n\u2019en citer que quelques-uns. Le patrimoine immat\u00e9riel se manifeste un peu partout toute l\u2019ann\u00e9e durant. Il fait partie int\u00e9grante de notre vie sociale et est transmis de g\u00e9n\u00e9ration en g\u00e9n\u00e9ration. A l\u2019occasion de la session acad\u00e9mique qui s\u2019est tenue \u00e0 l\u2019Atomium, les ministres de l\u2019Agriculture Joke Schauvliege (Flandre) et Ren\u00e9 Collin (Wallonie), les ministres de la Culture Sven Gatz (Flandre), Alda Greoli (Wallonie) et Isabelle Weckmans (Communaut\u00e9 germanophone), le ministre d\u2019Etat Herman De Croo et le ministre pr\u00e9sident Rudi Vervoort ont soutenu le projet et sign\u00e9 la \u2018charte pour la sauvegarde et la promotion de la culture du \u2018fritkot\u2019 belge\u2019.<\/p>\n\r\n\t\t\t\t\t\n\r\n\t\t\t\t\t<!-- START UNITE GALLERY 1.7.62 Dans son discours, il ne dissimula en rien son amour pour la frite (avec de la mayonnaise). A propos de ce plat typiquement belge, le Prince Laurent a d\u00e9clar\u00e9\u00a0: \u00ab\u00a0La pomme de terre est le repas social par excellence\u00a0\u00bb et il a joint le geste \u00e0 la parole lors de la r\u00e9ception frites qui se tenait au pied de l\u2019Atomium. Le Prince venait auparavant de recevoir l\u2019insigne de Grand Officier de l\u2019Ordre National du Cornet \u00e0 Frites d\u2019Or, et d\u2019\u00eatre nomm\u00e9 promoteur de la frite belge et de la culture du \u2018fritkot\u2019.<\/p>\n<p>L\u2019ambassadeur symbolique de la frite belge, le personnage James Bint, a \u00e9galement \u00e9t\u00e9 pr\u00e9sent\u00e9 au cours de l\u2019\u00e9v\u00e9nement. Son nom n\u2019a pas \u00e9t\u00e9 choisi au hasard\u00a0: il se r\u00e9f\u00e8re notamment \u00e0 la vari\u00e9t\u00e9 populaire de pommes de terre, \u00e0 savoir la bintje. Son r\u00f4le sera de promouvoir la frite belge \u00e0 l\u2019\u00e9tranger. Au cours de cette m\u00eame session acad\u00e9mique Paul Illegems, que nous connaissons \u00e9galement au travers de l\u2019\u2019Encyclop\u00e9die de la Frite\u2019 et d\u2019autres \u0153uvres, proposa d\u2019adapter l\u2019appellation du secteur et de parler dor\u00e9navant de \u2018horefrieca\u2019, d\u2019embl\u00e9e une r\u00e9f\u00e9rence \u00e0 la frite et \u00e0 la fricadelle et un hommage au \u2018fritkot\u2019. La baraque \u00e0 frites est un lieu de rencontre sociale et n\u2019a pas son pareil pour r\u00e9unir les gens de statuts et d\u2019horizons \u00e0 ce point diff\u00e9rents qui y laissent s\u2019exprimer leurs sens en d\u00e9gustant une frite \u00f4 combien savoureuse.<\/p>\n<p><strong>Une aubaine pour le chiffre d\u2019affaires<\/strong><\/p>\n<p><strong>\u00a0<\/strong>La reconnaissance nationale constitue une premi\u00e8re \u00e9tape importante en vue de la reconnaissance par l\u2019UNESCO. Cependant, la demande officielle n\u2019a pas encore \u00e9t\u00e9 introduite aupr\u00e8s de l\u2019organe de l\u2019ONU. \u00ab\u00a0Les Belges devaient d\u2019abord prendre conscience de ce patrimoine\u00a0\u00bb, selon Bernard Lef\u00e8vre, pr\u00e9sident de l\u2019Union nationale des frituristes (Unafri). \u00ab\u00a0Une \u00e9ventuelle candidature aupr\u00e8s de l\u2019UNESCO exigerait \u00e9norm\u00e9ment de travail.\u00a0\u00bb<br \/>\nUne telle reconnaissance attirera \u00e0 coup s\u00fbr bon nombre de touristes. D\u2019autres produits et secteurs belges agr\u00e9\u00e9s ont connu une sensible augmentation des ventes. La Belgique compte au total quelque 5.000 friteries.
