Contrairement \u00e0 ce que son nom pourrait laisser entendre, il ne s\u2019agit pas d\u2019un spectacle. C\u2019est un restaurant dans lequel l\u2019avocat est omnipr\u00e9sent. The Avocado Show a tout d\u2019abord \u00e9t\u00e9 lanc\u00e9 \u00e0 Amsterdam et s\u2019est ensuite install\u00e9 dans diff\u00e9rents endroits, dont r\u00e9cemment Bruxelles. Ron a soulign\u00e9 toute l\u2019importance d\u2019un \u00ab mono-produit \u00bb. En d\u2019autres termes, cela consiste \u00e0 ne travailler qu\u2019avec un seul produit et \u00e0 le mettre sous le feu des projecteurs \u00e0 l\u2019aide de m\u00e9dias (sociaux) modernes.<br \/>\nLe second exemple a \u00e9t\u00e9 pr\u00e9sent\u00e9 par Alexis et Arnaud Mestdag et leur restaurant japonais Takumi, \u00e0 Bruxelles. Ces chefs ont \u00e9galement \u00e9labor\u00e9 un concept de menu limit\u00e9, dont la philosophie r\u00e9f\u00e8re \u00e0 la Formule 1 : si tout se passe tr\u00e8s vite, l\u2019exp\u00e9rience doit \u00eatre fantastique et inoubliable. Takumi lorgne par-del\u00e0 les fronti\u00e8res et esp\u00e8re tr\u00e8s bient\u00f4t jouer sur la sc\u00e8ne internationale. La n\u00e9cessit\u00e9 d\u2019un bon d\u00e9part a \u00e9galement \u00e9t\u00e9 mise en \u00e9vidence : les trois premiers mois sont d\u2019une importance capitale.<br \/>\nMarc Waelbers de Foodproof a quant \u00e0 lui soulign\u00e9 l\u2019importance de ce qu\u2019il a ironiquement baptis\u00e9 \u00ab concept MARC \u00bb. Il s\u2019agit d\u2019un concept marketing qui s\u2019appuie sur les piliers Meeting, Attraction, Reason et Connection. Cela consiste, en d\u2019autres termes, \u00e0 d\u00e9terminer comment trouver et convaincre votre public potentiel de fr\u00e9quenter votre restaurant.<br \/>\nMarc Waelbers d\u2019aborder \u00e9galement l\u2019importance de la Belgian Restaurant Association. La BRA indique que la seule solution pour obtenir un statut officiel et l\u00e9gal dans l\u2019horeca est d\u2019attirer des investisseurs \u00e9trangers.
