Pour le beurre aux herbes. Mixer toutes les herbes s\u00e9ch\u00e9es au Thermomix. M\u00e9langer dans un beurre pommade. Etaler pour faire une croute sur le poisson.<\/p>\n<p class=\"p2\"><strong>Pour la brunoise de l\u00e9gumes<\/strong><\/p>\n<p class=\"p2\">Nettoyer et d\u00e9couper les courgettes, poivron long, carotte, c\u00e9leri rave. Faire ensuite suer les l\u00e9gumes au beurre noisette avec des crevettes grises \u00e0 cru. Pr\u00e9parer un beurre blanc aux crevettes grises.<\/p>\n<p class=\"p4\"><strong>Dressage<\/strong><\/p>\n<p class=\"p2\">Placer la brunoise de l\u00e9gumes dans le creux de l\u2019assiette. Ajouter le maigre avec le beurre aux herbes. Verser ensuite le beurre blanc aux crevettes.
