    Pr\u00e9paration<\/b><\/h4>\n

    Assaisonner et colorer la couronne d\u2019agneau dans une po\u00eale, ajouter le beurre, le thym et l\u2019ail. Enfourner pendant 8 min. Laisser reposer la viande pendant 15 min. Remetter au four pendant 4 minutes. Peler les asperges. Les faire cuire dans une eau sal\u00e9e jusqu\u2019\u00e0 ce qu\u2019elles soient al dente.\u00a0<\/span>Saisir les morilles, saler et poivrer. Ajouter le thym, l\u2019ail et le beurre. D\u00e9glacer au vin blanc et ajouter le jus brun. Laisser r\u00e9duire.<\/p>\n

    Monter le plat : disposer le veau, dessus les asperges et les morilles et quelques tranches de truffe. Napper avec la sauce.<\/p>\n
