Cette enseigne pr\u00e9c\u00e9demment bien connue sous le nom \u2018Les floraisons de Guy\u2019 a \u00e9t\u00e9 reprise, totalement relook\u00e9e puis dot\u00e9e d\u2019un nouveau chef par son propri\u00e9taire investisseur. Aujourd\u2019hui appel\u00e9e \u2018L\u2019Eveil des Saveurs\u2019 elle est orchestr\u00e9e et g\u00e9r\u00e9e par Laurent L\u00e9veill\u00e9. Un nom pr\u00e9destin\u00e9 pour celui que nous avons connu, il y a une pinc\u00e9e d\u2019ann\u00e9es, au Manoir de L\u00e9bioles sur les hauteurs de Spa.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">D\u2019origine fran\u00e7aise, Laurent L\u00e9veill\u00e9 est arriv\u00e9 en Belgique il y a cinq ans. Avant cela, il a pas mal voyag\u00e9 et a travaill\u00e9 en France et \u00e0 l\u2019\u00e9tranger aux c\u00f4t\u00e9s de grands noms dont la r\u00e9putation n\u2019est plus \u00e0 faire. Tels Jean-Fran\u00e7ois Girardin** au Ritz \u00e0 Paris, Gordon Ramsay, Christian Faure (Le Cordon Bleu), Michel Roux Junior (Le Gavroche) \u00e0 Londres. Il a aussi gagn\u00e9 divers concours (1er Prix de la Grande Finale du Royaume-Uni \u2018Les Disciples d\u2019Auguste Escoffier\u2019, 1er Prix \u2018Troph\u00e9e Roland Luck de Picardie\u2019, et d\u2019autres.<\/span><\/p>\n<p class=\"p1\">Et lorsqu\u2019on lui demande comment il qualifie sa cuisine, il parle in\u00e9vitablement tradition et respect des anciens, cr\u00e9ativit\u00e9 et int\u00e9r\u00eat vigilant pour les producteurs locaux. Et jamais il ne renonce \u00e0 rappeler qu\u2019il est un vrai \u2018Disciple d\u2019Escoffier\u2019\u00a0!<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<h4 class=\"p2\"><span class=\"s2\"><b>De l\u2019esth\u00e9tisme, du terroir local et du go\u00fbt avant tout<\/b><\/span><\/h4>\n<p class=\"p1\">Finalement, rien d\u2019\u00e9tonnant \u00e0 d\u00e9couvrir \u00e0 Malm\u00e9dy comme ce f\u00fbt le cas \u00e0 Spa, une assiette d\u2019un grand raffinement et d\u2019une esth\u00e9tique s\u00e9duisante.<\/p>\n<p class=\"p1\">\u00ab\u00a0Je suis venu, \u00e0 l\u2019invitation du propri\u00e9taire des lieux avec l\u2019id\u00e9e d\u2019apporter \u00e0 cette maison une nouvelle jeunesse, une cuisine bien d\u2019aujourd\u2019hui faite avec les tr\u00e8s bons produits que l\u2019on trouve dans la r\u00e9gion. Je ne suis ici que depuis quatre mois mais j\u2019ai d\u00e9j\u00e0 \u00e9t\u00e9 rencontrer plusieurs artisans producteurs. Je peux vous dire qu\u2019ils sont nombreux \u00e0 offrir des produits qualitatifs et qui valent tous ceux que l\u2019on pourrait trouver en France ou ailleurs. Je pense, par exemple \u00e0 la Framboiserie de Malmedy o\u00f9 je vais chercher de quoi faire un dessert au chocolat et aux framboises. J\u2019aime aller chez un boucher local, parler avec lui et l\u2019\u00e9couter avant d\u2019imaginer mes plats et menus. Je fais pareil pour les l\u00e9gumes, les laitages et, pour finir, tout ce que je peux trouver \u00e0 proximit\u00e9. C\u2019est tr\u00e8s enrichissant\u00a0\u00bb nous confie-t-il \u00ab\u00a0et je vais poursuivre en ce sens puisque les gens sont l\u00e0 et qu\u2019ils reviennent r\u00e9guli\u00e8rement.\u00a0\u00bb<\/p>\n<h4 class=\"p2\"><span class=\"s2\"><b>Vue sur les Hautes Fagnes et cuisine en deux styles<\/b><\/span><\/h4>\n<p class=\"p1\">L\u2019Eveil des Saveurs est particuli\u00e8rement bien situ\u00e9. Dominant la vall\u00e9e des Tr\u00f4s Mar\u00eats, entour\u00e9 d\u2019une vaste terrasse et am\u00e9nag\u00e9 avec go\u00fbt et modernit\u00e9.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p class=\"p1\">Je ne voulais pas faire fuir la client\u00e8le fid\u00e8le du chef-propri\u00e9taire pr\u00e9c\u00e9dent, explique Laurent L\u00e9veill\u00e9. Nous proposons donc deux cuisines diff\u00e9rentes. L\u2019une bistronomique, l\u2019autre gastronomique. Mais c\u2019est cette derni\u00e8re qui remporte d\u00e9j\u00e0 le plus de succ\u00e8s. Les gens viennent et reviennent pour les plats gastronomiques dont plusieurs plats \u2018signature\u2019 que je faisais au Manoir de L\u00e9bioles. D\u2019autres viennent pour un bon steak ou des boulets \u00e0 la li\u00e9geoise, le dimanche midi. Peu \u00e0 peu, je pense qu\u2019il y aura plus de demandes pour des plats dits gastronomiques. Les gens ont envie de se faire plaisir et de passer de bons moments. Mais le principal est d\u2019avoir carte blanche et que je puisse travailler en fonction de ce que je d\u00e9couvre chez les producteurs des environs. Je peux proposer du Tartare de truite D\u2019Ondanval, mais aussi le Li\u00e8Gin, la Framboiserie de Malmedy, \u2026<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p class=\"p1\">J\u2019aime surprendre aussi en cr\u00e9ant des plats particuliers, comme un os \u00e0 moelle v\u00e9g\u00e9tal \u00e0 base de c\u00e9leri.
