Aujourd\u2019hui, les cocktails ne se limitent plus \u00e0 un alcool et des jus de fruits. M\u00eame si \u00ab\u00a0on constate un retour en force des grands classiques qui ont fait l\u2019histoire s\u00e9culaire des cocktails mais en proposant aussi de nouvelles versions\u00a0\u00bb, nous dit Filippo Baldan, un de nos grands bartenders. \u00ab\u00a0Ainsi, le classique \u2018mule\u2019 \u00e0 base de vodka, peut se d\u00e9cliner en \u2018irish mule (avec du whiskey irlandais), du gin ou encore de la tequila et du mezcal. Sans oublier d\u2019ajouter une touche de ginger beer, tr\u00e8s tendance actuellement\u00a0\u00bb. Et d\u2019ajouter\u00a0: \u00ab\u00a0les deux eaux-de-vie mexicaines, tequila et mezcal, sont de plus en plus la base de cocktails. Il n\u2019y a pas que la c\u00e9l\u00e9brissime \u2018margarita\u2019 mais aussi la \u2018Paloma\u2019 tr\u00e8s populaire au Mexique. Le gin est toujours tr\u00e8s sollicit\u00e9 pour l\u2019\u00e9laboration de cocktails ainsi que le rhum. Et pas seulement que pour le \u2018mojito\u2019.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p class=\"p1\">L\u2019amertume est aussi de retour avec un cocktail qui est au top actuellement des demandes dans le monde, le Negroni, mais aussi avec d\u2019autres \u00e0 base d\u2019amaro, cette liqueur italienne. C\u00f4t\u00e9 p\u00e9tillant, il n\u2019y a pas que le Spritz mais \u00e9galement d\u2019autres cocktails \u00e0 base de tonic, de ginger beer.<\/p>\n<h4 class=\"p2\"><span class=\"s1\"><b>Beaucoup d\u2019imagination pour des cr\u00e9ations insolites<\/b><\/span><\/h4>\n<p class=\"p1\">Dans leur bar namurois \u2018Botanicals by Alfonse\u2019, Valentin Norberg et sa compagne Charlie, cr\u00e9ent des cocktails \u00e0 base de jus, d\u2019infusions, de sirops maison, de plantes. Ils pratiquent aussi le \u2018foraging\u2019, la cueillette sauvage de la flore de leur r\u00e9gion. La carte est chang\u00e9e toutes les trois semaines. Une carte \u00e9ph\u00e9m\u00e8re qui peut se d\u00e9cliner par th\u00e8mes, souvent tr\u00e8s originaux. Ainsi, celle qui fut d\u00e9di\u00e9e aux s\u00e9ries et aux films de leur enfance. Il y a eu le cocktail \u2018Choco Sinok\u2019 inspir\u00e9 d\u2019un film de 1985. Il fut compos\u00e9 de gin, d\u2019un cordial \u00e0 l\u2019ananas, de bitter, piment et romarin, de Lillet blanc et d\u2019une infusion au go\u00fbt de pizza. Le \u2018fat washing\u2019 est pratiqu\u00e9\u00a0: on r\u00e9frig\u00e8re le m\u00e9lange pour s\u00e9parer la graisse des ar\u00f4mes. Ou encore l\u2019\u2019Indiana Jones\u2019 comprenant tequila, Campari, cordial de banane, bitter orange et curry, sherry de type \u2018Fino\u2019 et un soda au gingembre ferment\u00e9.<\/p>\n<h4 class=\"p2\"><span class=\"s1\"><b>Des cr\u00e9ations belges de mocktails<\/b><\/span><\/h4>\n<p class=\"p1\">C\u2019est un d\u00e9fi pour les bartenders\u00a0: cr\u00e9er des cocktails sans alcools. Ces mocktails (\u2018mock\u2019, en anglais, signifie \u2018imiter\u2019) qui d\u00e9sirent, notamment, reproduire le go\u00fbt de l\u2019alcool sans cet \u00e9l\u00e9ment. Des recettes de cocktails classiques d\u00e9clin\u00e9s sans alcool gr\u00e2ce \u00e0 la \u00adproduction actuelle de grands classiques comme gin, vodka, rhum. En Belgique, des start-up se sont lanc\u00e9es dans cette production vou\u00e9e \u00e0 un bel avenir. Ainsi les deux s\u0153urs Kaat et Marie. Cette derni\u00e8re \u00e9tait intol\u00e9rante \u00e0 l\u2019alcool et a cr\u00e9\u00e9 le \u2018mocktail club\u2019. Avec un chef, Thijs Gelaude, le trio sugg\u00e8re des accords avec des plats 100% v\u00e9g\u00e9tariens, \u00e0 de rares exceptions comme les hu\u00eetres. Cela donne des mocktails rhubarbe et fenouil avec des hu\u00eetres de Z\u00e9lande ; th\u00e9 vert, fleur d\u2019oranger avec nouilles et soba \u00e0 l\u2019oriental\u00a0; pamplemousse, vanille et tarte \u00e0 la tomate ; basilic, fleur de sureau, sabl\u00e9 breton et sorbet\u00a0cl\u00e9mentine.<\/p>\n<p class=\"p1\">La distillerie 0,0% Niets.Co, surnomm\u00e9e \u2018the king of zero\u2019, a cr\u00e9\u00e9 le gin sans alcool Botaniets, distill\u00e9 en Belgique. Elle sugg\u00e8re des grands classiques autour de lui comme un gin tonic fatalement revisit\u00e9\u00a0: gin Botaniets, tonic \u00e0 la fleur de sureau, jus de citron et pour la d\u00e9co, une branche de romarin. Ou encore, le \u2018NietsFix\u2019\u00a0: gin, ginger beer, jus de citron vert, piment rouge moulu.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<h4 class=\"p2\"><span class=\"s1\"><b>Cocktails et ingr\u00e9dients\u00a0: un petit ab\u00e9c\u00e9daire<\/b><\/span><\/h4>\n<p class=\"p2\"><strong><span class=\"s1\">Basil Smash<\/span><\/strong><\/p>\n<p class=\"p1\">C\u2019est un cocktail \u00e0 base de gin et de feuilles de basilic. On ajoute du jus de citron et du sirop de sucre. Une cr\u00e9ation du bartender allemand J\u00f6rg Meyer.<\/p>\n<p class=\"p2\"><strong><span class=\"s1\">Coffee Tonic<\/span><\/strong><\/p>\n<p class=\"p1\">Curieuse association, n\u00e9e aux Etats-Unis, entre un caf\u00e9 de type expresso, servi froid, et du tonic. On rajoute des gla\u00e7ons dans le verre.<\/p>\n<p class=\"p2\"><strong><span class=\"s1\">Espresso Martini<\/span><\/strong><\/p>\n<p class=\"p1\">Martini d\u00e9signe ici le type de verre (\u00e0 pied, de forme conique) et non le vermouth. Voil\u00e0 un cocktail de plus en plus demand\u00e9 (voir le classement de \u2018Drinks International\u2019). Il est compos\u00e9 de vodka, liqueur de caf\u00e9 et de caf\u00e9 espresso. On peut y ajouter un peu de fleur de sel.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p class=\"p2\"><strong><span class=\"s1\">Frozen<\/span><\/strong><\/p>\n<p class=\"p1\">Des cocktails givr\u00e9s, granit\u00e9s. Ils restent plus longtemps frais dans le verre et peuvent s\u2019appr\u00e9cier en d\u00e9but de d\u00e9gustation avec une cuill\u00e8re. Un exemple\u00a0: le daiquiri. Dans le c\u00e9l\u00e8bre bar \u2018Floridita\u2019 de La Havane, on sert le \u2018Papa Doble\u2019, un Daiquiri en hommage \u00e0 Ernest Hemingway qui y avait ses habitudes. Pourquoi \u2018doble\u2019\u00a0? Parce que le c\u00e9l\u00e8bre \u00e9crivain souhaitait une double dose de rhum\u2026 On mixte de la glace pil\u00e9e avec du rhum (6-8 cl), du jus de citron vert et un peu de liqueur de marasquin.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p class=\"p2\"><strong><span class=\"s1\">Ginger Beer<\/span><\/strong><\/p>\n<p class=\"p1\">C\u2019est un soda ferment\u00e9 au gingembre, sans alcool donc. Eau, sucre, gingembre et levain (pour la fermentation). Tr\u00e8s populaire en Jama\u00efque, il rentre dans de nombreux cocktails actuels. Des marques en font aussi le succ\u00e8s\u00a0: Canada Dry, Schweppes, Fever Tree.<\/p>\n<p class=\"p2\"><strong><span class=\"s1\">Hugo Spritz<\/span><\/strong><\/p>\n<p class=\"p1\">C\u2019est une d\u00e9clinaison du spritz originel. L\u2019Ap\u00e9rol est remplac\u00e9 par une liqueur de fleur de sureau (comme le Saint-Germain). Menthe \u00e9cras\u00e9e, Prosecco et eau gazeuse compl\u00e8tent ce cocktail.<\/p>\n<p class=\"p2\"><strong><span class=\"s1\">Negroni<\/span><\/strong><\/p>\n<p class=\"p1\">C\u2019est d\u00e9sormais le cocktail le plus vendu dans le monde. Il a \u00e9t\u00e9 imagin\u00e9 par le comte Negroni dans son bar pr\u00e9f\u00e9r\u00e9 de Florence. Il souhaitait remplacer dans son \u2018americano\u2019 l\u2019eau gazeuse par du gin. Il comprend donc, outre cet alcool, du vermouth rouge et du bitter (comme le campari).<\/p>\n<p class=\"p2\"><strong><span class=\"s1\">Paloma<\/span><\/strong><\/p>\n<p class=\"p1\">C\u2019est un grand classique mexicain et tr\u00e8s populaire dans ce pays. Ses composants\u00a0? De la Tequila blanche (jeune, non \u00e9lev\u00e9e dans le bois), du jus de pamplemousse, du jus de citron vert, du sirop d\u2019agave. On ajoute en finale de l\u2019eau gazeuse.<\/p>\n<p class=\"p2\"><strong><span class=\"s1\">Pisco Sour<\/span><\/strong><\/p>\n<p class=\"p1\">Deux pays revendiquent la paternit\u00e9 de cette eau-de-vie de vin (comme le brandy)\u00a0: le P\u00e9rou et le Chili. Les raisins, au Chili, proviennent surtout de la famille des muscats. Ce cocktail est compos\u00e9, outre de pisco, de jus de citron vert et de sucre. Traditionnellement, on ajoute dans le shaker un peu de blanc d\u2019\u0153uf qui permet, apr\u00e8s une vive agitation au shaker, de former une mousse blanche en surface du verre.<\/p>\n<p class=\"p2\"><strong><span class=\"s1\">Rhum spiced<\/span><\/strong><\/p>\n<p class=\"p1\">Tr\u00e8s tendance depuis quelques ann\u00e9es, c\u2019est un rhum aromatis\u00e9 par infusion ou mac\u00e9ration.
