Les fabricants de mat\u00e9riel innovent et les restaurateurs proposent des formules BBQ toujours plus attrayantes.<span class=\"Apple-converted-space\">\u00a0 <\/span>C\u2019est le moment d\u2019ouvrir l\u2019\u0153il sur les nouveaut\u00e9s de l\u2019\u00e9t\u00e9.<\/span><\/strong><\/p>\n<p class=\"p1\">Aujourd\u2019hui, apr\u00e8s avoir men\u00e9 l\u2019enqu\u00eate aupr\u00e8s de fournisseurs et de restaurateurs, nous constatons que de plus en plus de chefs s\u2019\u00e9quipent d\u2019un BBQ pour l\u2019\u00e9t\u00e9. Souvent, les fabricants leur confient le r\u00f4le d\u2019ambassadeurs, leur pr\u00eatent le mat\u00e9riel pour des d\u00e9monstrations- d\u00e9gustations en situation r\u00e9elle. Les clients sont les premiers \u00e0 affluer, les restaurateurs sont ravis de tester le mat\u00e9riel avant d\u2019en faire l\u2019acquisition et les fournisseurs voient ainsi leur mat\u00e9riel parfaitement mis en valeur.<\/p>\n<p class=\"p1\">Ce f\u00fbt d\u2019ailleurs notre cas, lorsque l\u2019\u00e9t\u00e9 dernier, nous avons d\u00e9couvert au cours d\u2019un BBQ organis\u00e9 par l\u2019APAQ-W, la Plancha MWD. Une plancha innovante \u00e0 laquelle s\u2019activait l\u2019ex-candidat Top Chef, Julien Lapraille. Quelques temps avant, c\u2019est au Comptoir de l\u2019Eau Vive (Erpent) que nous avions d\u00e9couvert les BBQ et les Green Egg du magasin voisin, CEMAES. Et au printemps pr\u00e9c\u00e9dent, nous avions aussi pu d\u00e9guster et appr\u00e9cier le b\u0153uf irlandais cuit \u00e0 la plancha chez Maxime Colin \u00e0 Kraainem.<\/p>\n<h4 class=\"p2\"><span class=\"s1\"><b>Tendances \u00e9t\u00e9 2023<\/b><\/span><\/h4>\n<p class=\"p1\">Dans le secteur de l\u2019Horeca, c\u2019est aussi une fa\u00e7on de faire des \u00e9conomies d\u2019\u00e9nergie, de proposer les meilleurs produits locaux et de cr\u00e9er une ambiance estivale personnalis\u00e9e. Bons plans du moment\u00a0: d\u00e8s que l\u2019on dispose d\u2019un ext\u00e9rieur un rien sympa, s\u2019\u00e9quiper d\u2019un barbecue, d\u2019une plancha ou autre brasero autour desquels expliquer les produits ainsi cuisin\u00e9s. Une belle grillade party cr\u00e9era toujours un attrait suppl\u00e9mentaire \u00e0 votre enseigne et une autre ambiance pleine de convivialit\u00e9 et d\u2019\u00e9changes.<\/p>\n<p class=\"p1\">Au fil de nos interviews, le plus \u00e9vident en mati\u00e8re de nouveaut\u00e9s est le large \u00e9ventail de mat\u00e9riel innovant et de plus en plus pens\u00e9 pour l\u2019Horeca. La vari\u00e9t\u00e9 des produits \u00e0 cuisiner ainsi est de plus en plus large au point que les traditionnelles viandes, volailles et poissons au BBQ y ont fait place d\u00e9sormais aux fruits et l\u00e9gumes. C\u2019est au Comptoir de l\u2019Eau Vive que nous avons commenc\u00e9, il y a quelques ann\u00e9es, en pr\u00e9parant et en fumant nos produits dans le Green Egg du magasin CEMAES situ\u00e9 en face. Je travaille avec du \u00adBinchotan, un charbon blanc japonais. Sans carbone, il tient longtemps la chaleur et donne un bon go\u00fbt au produit grill\u00e9. Cette ann\u00e9e, les grillades ont d\u00e9but\u00e9 au Green de l\u2019Eau Vive o\u00f9 Tristan Martin vient r\u00e9guli\u00e8rement travailler avec nous. Nous y mettons sur le grill d\u2019une sorte de BBQ suspendu des asperges de chez St\u00e9phane Longlune. C\u2019est original et d\u00e9licieux\u00a0! Je pr\u00e9pare m\u00eame du homard entier, de l\u2019agneau de Sisteron au BBQ. Cette fa\u00e7on de cuisiner divers produits inattendus au BBQ est un vrai challenge. J\u2019ai aussi des braseros que j\u2019utilise \u00e9t\u00e9 comme hiver tant \u00e0 l\u2019Eau Vive qu\u2019au M\u00e9disey ; les gens adorent cela, c\u2019est tr\u00e8s convivial.\u00a0\u00bb<\/p>\n<p class=\"p2\">Maxime Colin \u00e0 Kraainem nous raconte ne plus pouvoir se passer de son Green Egg et du BBQ OFYR. Et lui aussi, il y pr\u00e9pare des produits nobles comme des langoustines, du b\u0153uf japonais Kagoshima ou irlandais savoureux. \u00ab\u00a0Je travaille sur le Green Egg depuis des ann\u00e9es et aussi avec un OFYR (BBQ, plancha avec b\u00fbches). Et\u00e9 comme hiver, et je fais mes fumaisons dans le Green Egg (canard, beurre, truite). A Erpent, l\u2019enseigne CEMAES le fournit \u00e0 plusieurs restaurants de la r\u00e9gion.<\/p>\n<p class=\"p2\"><span class=\"s2\">\u00ab\u00a0l\u2019OFYR, plancha au feu de bois, a beaucoup de succ\u00e8s car il est tr\u00e8s design et convivial, explique Boris Maes de CEMAES. Le feu de bois est \u00e0 l\u2019int\u00e9rieur et sa chaleur se r\u00e9percute sur tout le produit. Il est en plusieurs tailles, pour particuliers ou professionnels qui peuvent m\u00eame ajouter leur logo pour le personnaliser \u00e0 l\u2019image de leur restaurant. Il nous arrive d\u2019en pr\u00eater \u00e0 l\u2019un ou l\u2019autre chef, comme Charles Jeandrain (Attablez-vous) ou un boucher de la r\u00e9gion pour ses portes ouvertes.\u00a0\u00bb <\/span><\/p>\n<p class=\"p2\"><span class=\"s2\">Quant au Green Egg, qui peux se refermer, il a pour avantage d\u2019\u00eatre consid\u00e9r\u00e9 comme un four. Sa temp\u00e9rature est facile \u00e0 r\u00e9guler, la cuisson avec chaleur tournante permet de saisir une viande \u00e0 haute temp\u00e9rature. Il est un peu la star des BBQ\u00a0!<\/span><\/p>\n<h4 class=\"p1\"><span class=\"s1\"><b>Et l\u2019\u00e9conomie \u00e9nerg\u00e9tique dans tout cela <\/b><\/span><\/h4>\n<p class=\"p2\">C\u00f4t\u00e9 \u00e9nergie, il est toujours recommand\u00e9 de faire attention \u00e0 la qualit\u00e9 d\u2019un bon charbon de bois pour accompagner au mieux un produit de grande qualit\u00e9. Il y a trois ans nous avons cr\u00e9\u00e9 notre propre mod\u00e8le qui est le seul en Europe \u00e0 proposer une double plancha et est fourni avec tous les accessoires. Cela donne une plus grande surface de cuisson permettant de cuire divers produits tr\u00e8s diff\u00e9rents en m\u00eame temps (poisson d\u2019un c\u00f4t\u00e9, viandes ou l\u00e9gumes de l\u2019autre, \u2026).
