Dans la plaine, des prairies et des vignobles \u00e0 perte de vue, sur les flancs des montagnes entourant des for\u00eats denses entre lesquelles se dressent de gros rochers. L\u2019agriculteur Christophe Racle arrache au hasard quelques herbes et plantes dans la prairie et me les montre : \u00ab Regardez \u00bb, dit-il, \u00ab c\u2019est ce que mes Montb\u00e9liardes mangent tout au long de l\u2019ann\u00e9e. Et c\u2019est avec leur lait que l\u2019on produit le Comt\u00e9. \u00bb L\u2019histoire de ce fromage honn\u00eate et d\u00e9licieux en quatre \u00e9tapes.<\/strong><\/p>\n<h4 class=\"p1\"><span class=\"s1\"><b>La prairie<\/b><\/span><\/h4>\n<p class=\"p2\">Nous nous trouvons dans le \u2018Massif du Jura\u2019, la vieille chaine de montagne qui forme la fronti\u00e8re entre la France et la Suisse et qui s\u2019\u00e9tend de Besan\u00e7on au nord \u00e0 Bourg-en-Bresse au sud. La prairie sur laquelle nous nous trouvons n\u2019a pas de cl\u00f4ture, il s\u2019agit en fait d\u2019un p\u00e2turage que l\u2019on fauche deux fois par an et qui sert de fourrage permettant aux animaux de passer l\u2019hiver. Dans l\u2019herbe touffue, je d\u00e9couvre un grand nombre de plantes et de fleurs diff\u00e9rentes. Christophe Racle\u00a0: \u00ab\u00a0Une \u00e9tude a montr\u00e9 que sur un m\u00e8tre carr\u00e9 poussent et fleurissent environ 110 esp\u00e8ces de plantes. C\u2019est \u00e0 cette vari\u00e9t\u00e9 et \u00e0 cette richesse que le Comt\u00e9 doit sa saveur.\u00a0\u00bb<\/p>\n<p class=\"p2\">Plus pr\u00e8s de la ferme, nous faisons la connaissance des Montb\u00e9liardes. De grands animaux calmes dont la fourrure est parsem\u00e9e de taches brunes et blanches et qui nous regardent avec curiosit\u00e9. Lorsqu\u2019il s\u2019av\u00e8re que nous ne sommes ni comestibles, ni dangereux, leur int\u00e9r\u00eat disparait aussit\u00f4t. Nous les suivons du pr\u00e9 jusqu\u2019\u00e0 l\u2019\u00e9table. Sans se presser, elles cherchent leur place dans l\u2019\u00e9table ouverte et passent leur grosse t\u00eate par la barri\u00e8re. Traite des vaches deux fois par jour et transport chaque jour \u2013 de dimanche \u00e0 dimanche \u2013 des 20 litres de lait que produit chaque vache vers la \u2018Fruiti\u00e8re\u2019, lisez la fromagerie. A l\u2019instar de ses coll\u00e8gues, Christophe Racle a quelque 50 b\u00eates. Peu, direz-vous peut-\u00eatre, mais ici on pense en termes de qualit\u00e9 et non de quantit\u00e9. Chaque Montb\u00e9liarde doit d\u2019ailleurs disposer d\u2019au moins un hectare de p\u00e2turage. \u2018Doit\u2019, en effet, car c\u2019est ainsi que le stipule le cahier des charges du\u00a0Comt\u00e9.<\/p>\n<p class=\"p2\">Christophe\u00a0: \u00ab\u00a0Il y a trente ans, le gouvernement a encourag\u00e9 les jeunes \u00e0 choisir un avenir dans l\u2019agriculture. Mon \u00e9pouse Isabelle et moi avons relev\u00e9 le d\u00e9fi. Et c\u2019est sous la houlette du couple plus \u00e2g\u00e9 qui travaillait d\u00e9j\u00e0 sur cette exploitation que nous avons appris le m\u00e9tier. On ne peut jamais laisser les vaches seules, il faut les traire tous les jours et, d\u00e8s lors, g\u00e9rer une ferme \u00e0 deux familles est tr\u00e8s int\u00e9ressant. Cela nous permet de partir en vacances.\u00a0\u00bb<\/p>\n<p class=\"p2\">Si la patience est une belle vertu, c\u2019en est une que les Montb\u00e9liardes n\u2019ont malheureusement pas. Lorsqu\u2019elles doivent \u00eatre traites, elles &#8230; ont vraiment besoin d\u2019\u00eatre traites. Dans un petit b\u00e2timent jouxtant l\u2019\u00e9table se trouve, pensons-nous, le robot de traite. \u2018Robot\u00a0!\u2019 me fait aussit\u00f4t remarquer la fille, Mil\u00e8ne, dont c\u2019est le m\u00e9tier de traire. Mil\u00e8ne\u00a0: \u00ab\u00a0En Comt\u00e9, on n\u2019utilise pas de robot de traite, mais une machine \u00e0 traire. Et je ne joue pas sur les mots. Un robot de traite pulv\u00e9rise une bonne quantit\u00e9 de d\u00e9sinfectant sur le pis de la vache, tuant ainsi toutes les bact\u00e9ries. Les mauvaises, oui, mais aussi les bonnes dont nous avons besoin pour notre Comt\u00e9. Nous nettoyons soigneusement le pis \u00e0 la main, nous v\u00e9rifions que tout va bien et nous pla\u00e7ons ensuite les pistons de la machine sur le pis.\u00a0\u00bb<\/p>\n<p class=\"p2\">Lorsque Mil\u00e8ne succ\u00e8dera \u00e0 son p\u00e8re, elle h\u00e9ritera de la responsabilit\u00e9 de la production laiti\u00e8re de la ferme, mais aussi de toute la production comtoise de la Fruiti\u00e8re \u00e0 laquelle sa ferme fournit du lait. Pour comprendre, il faut remonter au XIIe si\u00e8cle. Il faut environ 400 litres de lait pour fabriquer une meule de Comt\u00e9.<\/p>\n<p class=\"p2\">La plupart des fermiers n\u2019ayant que quelques b\u00eates et donc loin d\u2019avoir assez de lait pour une telle meule, d\u00e9cid\u00e8rent de se regrouper en une sorte de coop\u00e9rative et d\u2019organiser la production ensemble. Ils ont cherch\u00e9 un petit b\u00e2timent, ont engag\u00e9 un fromager et ont livr\u00e9 leur lait \u00e0 cet endroit. Au d\u00e9part, le fromager ne recevait pas de salaire mais un pourcentage du chiffre d\u2019affaires. En cas de probl\u00e8me, il n\u2019\u00e9tait pas pay\u00e9.<\/p>\n<p class=\"p2\">Les Montb\u00e9liardes sont clairement satisfaites, lib\u00e9r\u00e9es qu\u2019elles sont de leurs 20 litres de lait. Le lait est vers\u00e9 dans le camion qui passe tous les jours, et celui-ci n\u2019a pas besoin d\u2019aller bien loin pour faire son d\u00e9chargement. A vol d\u2019oiseau, la Fruiti\u00e8re des Coteaux de Seille est \u00e0 peine \u00e0 12 km. Moins de 25 km de la ferme, comme le pr\u00e9voit le cahier des charges du Comt\u00e9. Nous suivons le camion sur des routes sinueuses, tant\u00f4t \u00e0 travers des champs et des prairies, tant\u00f4t \u00e0 travers des for\u00eats situ\u00e9es plus en hauteur. On a l\u2019impression qu\u2019il n\u2019y a pas grand monde dans le Jura.<\/p>\n<p class=\"p2\">Anthony Paget, le fromager, nous attend et nous fait entrer dans une petite pi\u00e8ce o\u00f9 il nous est demand\u00e9 de rev\u00eatir des blouses blanches, des couvre-chaussures et des charlottes. Charlottes\u00a0? Ce sont les bonnets que l\u2019on met sur nos cheveux. \u00ab\u00a0Vous \u00eates bien \u00e0 l\u2019heure\u00a0\u00bb, nous dit Anthony. \u00ab\u00a0Encore quelques minutes et le miracle se produira dans la premi\u00e8re cuve. D\u2019un c\u00f4t\u00e9 de la pi\u00e8ce on aper\u00e7oit trois impressionnantes cuves en cuivre. Des flocons se forment, c\u2019est le caill\u00e9.\u00a0\u00bb De temps en temps, il passe sa main dans le lait, et en retire \u00e0 chaque fois quelques flocons qui grossissent. Lorsque les flocons sont suffisamment gros, les lames de brassage sont remplac\u00e9es par des lames de coupe verticales. \u00adAnthony\u00a0: \u00ab\u00a0Cela permet d\u2019\u00e9viter que le caill\u00e9 ne s\u2019agglom\u00e8re.\u00a0\u00bb<\/span><\/p>\n<p class=\"p1\">Le lait est ensuite chauff\u00e9 \u00e0 56\u00b0C, ce qui transforme les flocons laineux en petits granul\u00e9s fermes. Ce m\u00e9lange est pomp\u00e9 \u00e0 travers un syst\u00e8me de tuyaux jusqu\u2019\u00e0 une machine de pressage. Les granul\u00e9s sont plac\u00e9s dans des moules en plastique dont les parois sont perc\u00e9es de trous microscopiques. Une presse extrait toute l\u2019humidit\u00e9 et il reste une masse de fromage \u00e0 p\u00e2te molle\u00a0: le tout jeune Comt\u00e9\u00a0!<\/p>\n<p class=\"p1\">Les premiers jours de son existence, le jeune Comt\u00e9 les passe sur des planches de ch\u00eane dans les entrep\u00f4ts frais de la Fruiti\u00e8re o\u00f9 on le retourne chaque jour avec amour. Dans ces entrep\u00f4ts, 40.000 meules de Comt\u00e9 m\u00fbrissent \u00e0 leur rythme. \u00ab\u00a0Ici on prend du temps pour faire de bonnes choses\u00a0\u00bb dit Anthony. Nous jetons un coup d\u2019\u0153il dans les Fromageries Vagne \u00e0 Poligny, capitale du Comt\u00e9. Au cours de la premi\u00e8re \u00e9tape, les meules sont empil\u00e9es dans de longues chambres froides o\u00f9 elles m\u00fbrissent dans des conditions de temp\u00e9rature et d\u2019humidit\u00e9 strictement contr\u00f4l\u00e9es. D\u2019autres fromageries sont situ\u00e9es dans des b\u00e2timents originaux, comme le Fort des Rousses, une ancienne forteresse militaire.
