L\u2019obscurit\u00e9 \u00e0 l\u2019ext\u00e9rieur et \u00e0 l\u2019int\u00e9rieur, ce sentiment de chaleur et de bien-\u00eatre, avec des bougies, des lampions, un sapin de No\u00ebl scintillant et, bien s\u00fbr, une table joliment dress\u00e9e et des plats savoureux. Les repas de f\u00eate sont de tous formats, tout comme les tables de f\u00eate d\u2019ailleurs. Nous avons rendu visite au Bar Bulot \u00e0 Zedelgem et avons demand\u00e9 au g\u00e9rant du restaurant, Emile Moerman, et au chef Destin Cannaert comment ils pr\u00e9parent les f\u00eates de No\u00ebl.<\/span><\/strong><\/p>\n<h4 class=\"p1\"><span class=\"s1\"><b>Dans l\u2019assiette<\/b><\/span><\/h4>\n<p class=\"p2\">Parce que No\u00ebl est avant tout une f\u00eate familiale, Destin estime qu\u2019il est important que le cuisinier de service puisse y participer. Pas de plats compliqu\u00e9s donc, mais un menu simple avec des produits de premi\u00e8re qualit\u00e9 qui, selon la philosophie de Bar Bulot, sont revisit\u00e9s de mani\u00e8re cr\u00e9ative. N\u2019oubliez pas d\u2019\u00e9tablir votre planning et surtout\u00a0: ne vous mettez pas \u00e0 exp\u00e9rimenter, mais optez pour des plats que vous connaissez parfaitement. Les sharing-plates sont toujours possibles, mais ceux-ci sont peut-\u00eatre plus adapt\u00e9s \u00e0 la soir\u00e9e de la Saint-Sylvestre lorsque tout le monde vient passer un moment chez vous et poursuit le compte \u00e0 rebours ailleurs.<\/p>\n<p class=\"p2\">Destin\u00a0: \u00ab\u00a0Un menu \u00e0 trois plats est un concept qui fonctionne bien parce que presque tout peut \u00eatre pr\u00e9par\u00e9 \u00e0 l\u2019avance et que le travail \u00e0 la minute est ainsi r\u00e9duit au minimum. Vous marquerez ainsi toujours des points en servant en entr\u00e9e un cocktail de crevettes, c\u2019est la pleine saison et notre mer du Nord en regorge, suivi d\u2019un magret de canard fum\u00e9 dans une salade d\u2019hiver avec des m\u00fbres, de la betterave ou du foie d\u2019oie ou encore un gravlax avec du concombre, de la cr\u00e8me aigre et des herbes aromatiques.\u00a0\u00bb<\/p>\n<p class=\"p1\">\u00ab\u00a0Vous pr\u00e9f\u00e9rez le poisson\u00a0? Alors une brandade de cabillaud avec un \u0153uf de ferme poch\u00e9, une sauce mousseline et des crevettes de Zeebrugge sera tout aussi festive. Cela peut sembler banal, mais un onglet \u00e0 l\u2019\u00e9chalote avec sauce bordelaise, fine champagne et foie gras fondu mettra tous les amateurs de viande d\u2019humeur festive. En choisissant une pi\u00e8ce de viande de premier choix, bien s\u00fbr\u00a0!\u00a0\u00bb<\/p>\n<p class=\"p1\">\u00ab\u00a0Pendant la p\u00e9riode des f\u00eates, c\u2019est \u00e9galement la saison du gibier qui bat son plein. Quoi de plus festif qu\u2019un beau morceau de gibier sur votre table de f\u00eate. Le li\u00e8vre, le chevreuil, le faisan et m\u00eame le cerf peuvent \u00eatre servis en filets ou en pot-au-feu chaud.\u00a0\u00bb<\/p>\n<p class=\"p1\"><span class=\"s1\">\u00ab\u00a0Vous n\u2019aimez pas trop le sucr\u00e9 en fin de repas\u00a0? Optez pour le fromage. Notre assortiment de fromages Bar Bulot est compos\u00e9 par les ma\u00eetres-affineurs Van Tricht, qui proposent une s\u00e9lection vari\u00e9e et sont heureux de fournir des informations sur les fromages dont la saveur est \u00e0 son apog\u00e9e.\u00a0\u00bb<\/span><\/p>\n<p class=\"p1\">\u00ab\u00a0Mais revenons quelques instants au d\u00e9but de la soir\u00e9e. L\u2019ap\u00e9ritif est accompagn\u00e9 d\u2019amuse-bouche, de petites \u2018d\u00e9licatesses\u2019 sens\u00e9es aiguiser l\u2019app\u00e9tit. Restez simple, et n\u2019oubliez pas que beaucoup de bonnes choses suivront. Apr\u00e8s un d\u00e9tour par les math\u00e9matiques, il a opt\u00e9 pour le monde de l\u2019Horeca. Au Bar Bulot de Zedelgem, il est directeur du restaurant. Avec le chef, il est l\u2019un des premiers membres de l\u2019\u00e9quipe \u00e0 arriver le matin. Outre la gestion de l\u2019\u00e9quipe de salle, il v\u00e9rifie les r\u00e9servations, r\u00e9pond au t\u00e9l\u00e9phone et aux courriels et est pr\u00e9sent pendant les deux services. Un travail tr\u00e8s prenant, certes, mais aussi tr\u00e8s vari\u00e9 et passionnant.<\/p>\n<p class=\"p2\"><span class=\"s2\">Pour Emile, la planification est la chose la plus importante pour que la f\u00eate se d\u00e9roule de mani\u00e8re harmonieuse. Il pr\u00e9f\u00e8re partir d\u2019une nappe blanche et construire petit \u00e0 petit en fonction de la circonstance. La couleur est envisageable, mais less is more en mati\u00e8re de d\u00e9coration de table.<\/span><\/p>\n<p class=\"p2\">Emile\u00a0: \u00ab\u00a0Les d\u00e9corations de table peuvent \u00eatre un peu plus exub\u00e9rantes \u00e0 No\u00ebl, mais ne remplissez pas la table de guirlandes et de boules. Contentez-vous de quelques \u00e9l\u00e9ments qui s\u2019harmonisent bien avec ce que vous avez suspendu dans le sapin de No\u00ebl. Ne placez les d\u00e9corations qu\u2019au tout dernier moment, afin de pouvoir estimer au mieux la quantit\u00e9 et le type de d\u00e9corations. Jusqu\u2019\u00e0 8 personnes, pas plus, au-del\u00e0, il est pr\u00e9f\u00e9rable de choisir une table ovale ou longue. L\u2019important est que les invit\u00e9s aient de l\u2019espace. Lors des f\u00eates de famille, vous avez naturellement un public vari\u00e9 en termes d\u2019\u00e2ge. N\u2019h\u00e9sitez pas \u00e0 donner aux plus jeunes leur propre table. Ils peuvent ainsi s\u2019\u00e9clipser plus facilement et&#8230; important\u00a0: il n\u2019y aura pas de vide autour de votre table.<\/p>\n<p class=\"p1\">Pour une f\u00eate, il est pr\u00e9f\u00e9rable de disposer toute la vaisselle en une seule fois\u00a0: tous les verres et tous les couverts. De cette fa\u00e7on, vous ne d\u00e9rangez pas les convives pendant le repas et les conversations peuvent se poursuivre. Je pense qu\u2019il est tr\u00e8s important de commencer par une assiette d\u2019accueil. Avoir d\u00e9j\u00e0 une assiette sur la table en arrivant est plus accueillant pour les convives. A mon sens, la serviette en lin est la plus jolie, mais, c\u2019est la f\u00eate et il y a beaucoup de monde, une bonne version en papier sera \u00e9galement du plus bel effet. Il en existe de tr\u00e8s belles actuellement.<\/p>\n<p class=\"p1\">Il est pr\u00e9f\u00e9rable de ne pas prendre l\u2019ap\u00e9ritif \u00e0 table, mais plut\u00f4t dans le salon. Et n\u2019oubliez pas la musique. Pas de chants de No\u00ebl, mais une musique classique l\u00e9g\u00e8re ou des morceaux faciles \u00e0 \u00e9couter qui cr\u00e9ent une atmosph\u00e8re agr\u00e9able tout en \u00e9tant discrets. Le duo a imm\u00e9diatement plac\u00e9 la barre tr\u00e8s haut et, en 2012, la troisi\u00e8me \u00e9toile Michelin ornait la fa\u00e7ade. L\u2019endroit \u00e9tait confortable mais petit, et en 2014, le restaurant trois \u00e9toiles a d\u00e9m\u00e9nag\u00e9 vers un nouvel emplacement\u00a0: une ferme restaur\u00e9e jouxtant une extension contemporaine ouverte au milieu d\u2019un grand jardin potager dans la ville voisine de Zedelgem. Mais \u00e0 l\u2019automne 2018, le monde culinaire belge s\u2019est arr\u00eat\u00e9 un instant\u00a0: Hertog Jan fermait ses portes\u00a0! Gert et Joachim voulaient plus de libert\u00e9 entrepreneuriale.<\/span><\/p>\n<p class=\"p1\">Cette libert\u00e9 entrepreneuriale s\u2019est traduite par le concept de sharing L.E.S.S.
