  • Poivre de Cayenne et sel de Maldon<\/li>\n<\/ul>\n

    Pr\u00e9paration <\/b><\/h4>\n

    Pelez les asperges et faites-les cuire pendant \u00bd heure \u00e0 85\u00b0C avec une pinc\u00e9e de sel de Maldon.<\/p>\n

    Faires l\u00e9g\u00e8rement r\u00e9duire le jus de pomelo, laissez refroidir et montez les jaunes d\u2019\u0153ufs \u00e0 feu doux avec ce jus. Ajoutez ensuite petit \u00e0 petit le beurre sal\u00e9 clarifi\u00e9. Rectifiez \u00e9ventuellement l\u2019assaisonnement en ajoutant encore un peu de jus, du poivre de Cayenne et du sel de Maldon.<\/p>\n

    Disposez les asperges sur l\u2019assiette, arrosez les extr\u00e9mit\u00e9s d\u2019un peu de sauce et r\u00e2pez dessus au microplan un peu de zeste de pomelo.<\/p>\n
