Tout ce que vous avez toujours voulu savoir sur la d\u00e9coupe du jambon et le jam\u00f3n lifestyle mais n\u2019avez jamais os\u00e9 demander, vous le d\u00e9couvrirez dans les lignes qui suivent. Un portrait.<\/strong><\/p>\n<p class=\"p1\">Cati Gomez est originaire de Huelva, elle a l\u2019allure d\u2019une Espagnole pure souche, vit depuis 23 ans \u00e0 Papendrecht dans la p\u00e9riph\u00e9rie de Rotterdam, et parle (tr\u00e8s) couramment le n\u00e9erlandais.<\/p>\n<p class=\"p1\">\u00ab Jam\u00f3n, le jambon et sa d\u00e9coupe est, pour moi, une forme d\u2019art, nous confie-t-elle. Chaque jambon et chaque tranche racontent d\u2019ailleurs une histoire, celle de leur r\u00e9gion d\u2019origine. En outre, le jam\u00f3n est une d\u00e9licatesse pleine de saveur, authentique et, nous l\u2019oublions parfois, saine. Chaque jambon est \u00e9galement diff\u00e9rent. \u00bb<\/p>\n<p class=\"p1\">Sur le terrain, la consommation et la production du jambon espagnol ont clairement augment\u00e9 au cours des derni\u00e8res d\u00e9cennies, et une attention particuli\u00e8re est accord\u00e9e \u00e0 la qualit\u00e9 du jambon et \u00e0 l\u2019utilisation de m\u00e9thodes de production traditionnelles.<\/p>\n<p class=\"p1\">\u00ab Lorsque nous parlons de jambon espagnol, nous ne parlons pas d\u2019une seule vari\u00e9t\u00e9, selon Cati Gomez. Les vari\u00e9t\u00e9s les plus connues sont le jambon Ib\u00e9rique (Jam\u00f3n Iberico) et le jambon Serrano (Jam\u00f3n Serrano). Ces jambons proviennent de diff\u00e9rentes races de porcs, respectivement du porc ib\u00e9rique et du porc blanc (Large White, Duroc et Pi\u00e9tran). Pendant les vacances, je devais aider \u00e0 la ferme, \u00e0 nourrir les cochons, et \u00e0 participer au rituel d\u2019abattage qui durait g\u00e9n\u00e9ralement deux jours et avait lieu en d\u00e9cembre et en janvier. Quand j\u2019\u00e9tais petite, j\u2019aidais \u00e0 faire les saucisses comme le chorizo et le salchich\u00f3n. C\u2019\u00e9tait un \u00e9v\u00e9nement et nous le f\u00eations \u00e0 chaque fois, confortablement install\u00e9s, tous ensemble, autour de la chemin\u00e9e et avec de la musique en fond sonore. Ces beaux moments sont \u00e0 jamais grav\u00e9s dans ma m\u00e9moire. \u00bb<\/span><\/p>\n<p class=\"p2\">L\u2019amour l\u2019a entra\u00een\u00e9e ensuite, voici 23 ans, aux Pays-Bas, o\u00f9 elle a commenc\u00e9 \u00e0 travailler comme assistante p\u00e9dagogique dans une garderie.<\/p>\n<p class=\"p2\">\u00ab Mais je n\u2019avais de cesse de faire la promotion et de parler des produits espagnols aupr\u00e8s de ma famille et de mes amis n\u00e9erlandais. Vers 2012, l\u2019id\u00e9e m\u2019est venue d\u2019en savoir davantage sur le jam\u00f3n, et d\u2019apprendre \u00e0 le d\u00e9couper pour apprendre aux autres \u00e0 l\u2019appr\u00e9cier et \u00e0 le respecter autant que moi. \u00c0 l\u2019\u00e9poque, les mots \u2018cortador\u2019 ou \u2018cortadora\u2019 n\u2019\u00e9taient gu\u00e8re connus au Benelux.<\/p>\n<p class=\"p2\">Finalement, je me suis rendue en Espagne en 2013 et j\u2019ai suivi une formation de \u2018d\u00e9coupeuse\u2019 \u00e0 la International Jam\u00f3n School, pour ensuite cr\u00e9er ma propre entreprise. J\u2019ai commenc\u00e9 \u00e0 d\u00e9couper sur le jamonero (support \u00e0 jambon) de mes parents et \u00e0 l\u2019aide de quelques couteaux que j\u2019avais achet\u00e9s. \u00c0 l\u2019\u00e9poque, je pensais qu\u2019il \u00e9tait important d\u2019avoir un dipl\u00f4me. Aujourd\u2019hui, je sais que ce n\u2019est qu\u2019un bout de papier pour commencer \u00e0 apprendre et \u00e0 se d\u00e9velopper en tant que professionnel. Au cours de ma carri\u00e8re, j\u2019ai continu\u00e9 \u00e0 \u00e9tudier le jambon et j\u2019ai suivi de nombreux cours. Parall\u00e8lement, je suis membre depuis 6 ans et vice-pr\u00e9sidente depuis 2 ans de l\u2019association nationale espagnole des cortadores (ANCJ), et je fais partie de la direction d\u2019une organisation \u00e0 but non lucratif (AGACUJ) qui veille \u00e0 la protection et \u00e0 la promotion de toutes sortes de jambons.<\/p>\n<p class=\"p1\">Il faut savoir qu\u2019en Espagne, les femmes ne sont autoris\u00e9es \u00e0 apprendre le m\u00e9tier de cortadora que depuis une quinzaine d\u2019ann\u00e9es. J\u2019\u00e9tais d\u2019ailleurs l\u2019une des premi\u00e8res femmes \u00e0 acc\u00e9der au m\u00e9tier de cartadora de jam\u00f3n, et en 2024, il y a toujours moins de femmes que d\u2019hommes dans ce m\u00e9tier. Par ailleurs, en Espagne, on ne peut se proclamer Maestro cortador qu\u2019apr\u00e8s avoir remport\u00e9 le concours national des cortadores de jam\u00f3n.<\/p>\n<p class=\"p1\">En Espagne, la profession de cortador n\u2019est officiellement reconnue et prot\u00e9g\u00e9e que depuis le 21 avril dernier. Pour moi, il s\u2019agit aussi de transmettre \u00e0 mon public mes connaissances du jambon, et toutes les facettes de sa maturation. Ce n\u2019est pas non plus une question de force, de longueur ou de sexe, mais de technique, de connaissances th\u00e9oriques et pratiques, de professionnalisme et de s\u00e9rieux sur le lieu de travail. Et last but not least\u00a0: vous devez avoir beaucoup d\u2019amour et de respect pour le produit jambon.<\/p>\n<p class=\"p2\">De nombreux processus naturels et particuliers ont de m\u00eame lieu dans les jambons. C\u2019est ainsi que le nombre de jours pendant lesquels un jambon est mis au sel d\u00e9pend \u00e9galement de son poids. En tout cas, les jambons ib\u00e9riques de qualit\u00e9 bellota doivent m\u00fbrir <span class=\"s2\">pendant au moins trois ans.<\/span><\/p>\n<p class=\"p2\"><span class=\"s3\">Au cours des 11 derni\u00e8res ann\u00e9es, je n\u2019ai consacr\u00e9 du temps qu\u2019\u00e0 l\u2019apprentissage du jambon et ma mission est de transmettre mes connaissances \u00e0 tous ceux qui s\u2019y int\u00e9ressent. Compte tenu de mon statut d\u2019ind\u00e9pendante, je ne vends pas de jambons moi-m\u00eame, mais j\u2019aide les importateurs de jambons du Benelux \u00e0 mieux vendre leurs produits, en me rendant sur place lors d\u2019ateliers, d\u2019\u00e9v\u00e9nements gastronomiques, de foires aux vins, de festivals, etc. Pour la d\u00e9coupe, j\u2019utilise trois couteaux\u00a0: un couteau pointu, un couteau de boucher pour parer le jambon et un jamonero, un long couteau traditionnel pointu que j\u2019aiguise moi-m\u00eame. L\u2019une est celle de la production, l\u2019autre celle de l\u2019affinage ou du s\u00e9chage. Parfois, tout se passe dans la m\u00eame zone, parfois non. Un jambon ib\u00e9rique peut \u00eatre produit dans diff\u00e9rentes zones. Pour l\u2019ib\u00e9rique, il existe quatre zones qui sont \u00e9galement des zones AOP\u00a0: en Andalousie, nous avons Jabugo dans la province de Huelva, et Valle de los Pedroches dans la province de Cordoue. Les r\u00e9gions d\u2019Estr\u00e9madure et de Guijuelo, dans la province de Salamanque, sont \u00e9galement importantes. On produit \u00e9galement un excellent jambon ib\u00e9rique dans les montagnes de S\u00e9ville et dans celles de Malaga. Le sauvignon blanc et le chardonnay me semblent \u00e9galement moins adapt\u00e9s, contrairement aux vins blancs plus secs, qui peuvent parfois pr\u00e9senter des notes acides et fra\u00eeches. Les sherrys secs tels que le fino, le manzanilla et le palo cortado conviennent \u00e9galement, et un cava ou un champagne bruts font toujours l\u2019affaire.<\/p>\n<h6 class=\"p1\"><span class=\"s1\">Une fois tranch\u00e9, combien de temps le jambon peut-il \u00eatre conserv\u00e9 ?<\/span><\/h6>\n<p class=\"p2\">\u00ab Une fois tranch\u00e9, je le consommerais dans l\u2019heure, sachant que l\u2019oxyg\u00e8ne rend le jambon plus sec. Un bellota peut \u00eatre conserv\u00e9 un peu plus longtemps, parce qu\u2019il contient proportionnellement plus de graisse. Une fois tranch\u00e9, je conserve le jambon \u00e0 l\u2019abri de la lumi\u00e8re et du soleil et je le place dans un endroit frais. Avec une feuille d\u2019aluminium autour de l\u2019assiette, le jambon atteindra la bonne temp\u00e9rature, et vous pourrez \u00e9galement le conserver parfaitement dans le r\u00e9frig\u00e9rateur.
