Des \u00e9quipes de 2 \u00e0 4 \u00e9l\u00e8ves \u00e9taient invit\u00e9es \u00e0 concevoir le concept id\u00e9al de restaurant d\u2019\u00e9cole (Innovation Award), \u00e0 s\u2019interroger sur la qualit\u00e9 de leur formation et \u00e0 r\u00e9fl\u00e9chir \u00e0 leurs projets d\u2019avenir.<\/p>\n<p>Individuellement, les \u00e9l\u00e8ves pouvaient \u00e9galement d\u00e9velopper une carte originale \u2014 menu ou bar \u2014 autour de th\u00e9matiques telles que l\u2019alimentation v\u00e9g\u00e9tale ou les cocktails et mocktails, accompagn\u00e9e de recettes (Creativity Award).<\/p>\n<p>Gault&amp;Millau a r\u00e9compens\u00e9 les dossiers les plus marquants. Parall\u00e8lement, plus de 100 jeunes futurs professionnels de l\u2019hospitalit\u00e9, issus de 13 \u00e9coles h\u00f4teli\u00e8res, ont pu rencontrer une large d\u00e9l\u00e9gation de chefs renomm\u00e9s, d\u2019entrepreneurs et d\u2019experts du secteur.<\/p>\n<p>\u00ab Nous ressentons de l\u2019enthousiasme partout, et les gens commencent aussi \u00e0 comprendre ce que nous faisons \u00bb, d\u00e9clare <strong>Marc De Clerck<\/strong>, CEO de Gault&amp;Millau Benelux. \u00ab Nous sommes convaincus que nous pouvons transmettre aux jeunes des choses qu\u2019ils n\u2019apprennent pas \u00e0 l\u2019\u00e9cole. \u00bb<\/p>\n<p>[\/et_pb_text][et_pb_gallery gallery_ids=&#8221;56257,56263,56259,56261&#8243; fullwidth=&#8221;on&#8221; _builder_version=&#8221;4.27.4&#8243; _module_preset=&#8221;default&#8221; auto=&#8221;on&#8221; global_colors_info=&#8221;{}&#8221;][\/et_pb_gallery][et_pb_text _builder_version=&#8221;4.27.4&#8243; _module_preset=&#8221;default&#8221; custom_margin=&#8221;60px||60px|||&#8221; hover_enabled=&#8221;0&#8243; global_colors_info=&#8221;{}&#8221; sticky_enabled=&#8221;0&#8243;]<\/p>\n<p>Lors d\u2019un panel inspirant, les chefs de renom Tim &amp; Ben Boury (restaurant Boury), Filip Claeys (De Jonkman \/ NorthSeaChefs), Lo\u00efc Rigolet (Comme chez Soi), Jolien Van Puyvelde (VAS) et Nicolas Decloedt (humus x hortense) ont partag\u00e9 leurs r\u00e9flexions sur ce que les \u00e9l\u00e8ves n\u2019ont g\u00e9n\u00e9ralement pas encore appris \u00e0 l\u2019\u00e9cole, mais qu\u2019ils d\u00e9couvrent rapidement durant leurs premi\u00e8res ann\u00e9es de travail.<\/p>\n<p>Une question spontan\u00e9e leur a \u00e9galement \u00e9t\u00e9 pos\u00e9e : qu\u2019ont-ils eux-m\u00eames appris des \u00e9tudiants et stagiaires ?<\/p>\n<p>\u00ab Pour moi, c\u2019est surtout la passion de la jeunesse \u00bb, explique Filip Claeys. \u00ab Un stagiaire ou un \u00e9tudiant est comme une \u00e9ponge : il absorbe \u00e9norm\u00e9ment. Cela me motive \u00e0 transmettre mes connaissances, et c\u2019est aussi mon r\u00f4le en tant que chef. Nous avons un si beau m\u00e9tier, que je consid\u00e8re comme la mayonnaise de notre soci\u00e9t\u00e9 ; c\u2019est aussi cela que je veux transmettre aux jeunes. \u00bb<\/p>\n<p>\u00ab Les jeunes me maintiennent jeune et fort \u00bb, ajoute Tim Boury. \u00ab Ils m\u2019apportent une \u00e9nergie, car nous devons \u00eatre un peu plus rapides qu\u2019eux. Bien s\u00fbr, ils doivent \u00eatre form\u00e9s, et nous devons les stimuler. C\u2019est comparable \u00e0 l\u2019entra\u00eenement et \u00e0 la comp\u00e9tition. \u00bb<\/p>\n<p>\u00ab Je suis moi-m\u00eame tr\u00e8s surpris qu\u2019ils continuent \u00e0 investir dans leur formation apr\u00e8s l\u2019obtention de leur dipl\u00f4me \u00bb, souligne Ben Boury, \u00e0 l\u2019origine de la Boury Academy. \u00ab Nous pouvons \u00e9galement apprendre de la dimension internationale de l\u2019Academy. Ce fonds, h\u00e9berg\u00e9 par la Fondation Roi Baudouin, soutiendra financi\u00e8rement les \u00e9l\u00e8ves issus de milieux d\u00e9favoris\u00e9s durant leur formation horeca.<\/p>\n<p>\u00ab Nous allons \u00e9galement lancer un appel aux directions des \u00e9coles h\u00f4teli\u00e8res afin de d\u00e9terminer ensemble comment ces fonds peuvent atteindre de mani\u00e8re optimale le bon public cible \u00bb, pr\u00e9cise Marc De Clerck.<\/p>\n<p>Au total, 70 \u00e9tudiants ont particip\u00e9 aux Aspiration, Innovation et Creativity Challenges, des d\u00e9fis qui stimulent l\u2019innovation et la cr\u00e9ation de concepts de menus originaux, tout en cr\u00e9ant un lien entre l\u2019enseignement et la pratique professionnelle.<\/p>\n<p>Un jury professionnel compos\u00e9 d\u2019experts de la gastronomie belge et de l\u2019\u00e9quipe Gault&amp;Millau a \u00e9valu\u00e9 les dossiers soumis, qui ont b\u00e9n\u00e9fici\u00e9 d\u2019une belle visibilit\u00e9 via un e-magazine et le site <a href=\"https:\/\/younghorecatalents.gaultmillau.be\/\">https:\/\/younghorecatalents.gaultmillau.be\/<\/a><\/p>\n<p>Outre l\u2019\u00c9cole h\u00f4teli\u00e8re de Gand, particuli\u00e8rement remarquable cette ann\u00e9e avec deux m\u00e9dailles d\u2019or, plusieurs autres candidatures de grande qualit\u00e9 ont \u00e9t\u00e9 r\u00e9compens\u00e9es.
